Autumn Granola

Autumn is my favorite season! The crisp, fresh air while the sun still gently shines, the beautiful colors of the falling leaves, and cozying up under a blanket. I live for it. And when you think of autumn, you naturally think of pumpkin spice, ofcourse.

How to make Pumpkin Spice Granola

Making homemade pumpkin spice granola is easy. First, you mix the dry ingredients together (hold the pecans) and the wet ingredients together, both in a separate bowl. Stir everything together and spread the granola out on a baking sheet lined with parchment paper. The larger your oven, the better, because when the oats have space they bake the crunchiest. Now they’re ready to go into the oven. Add the pecans after a few minutes to prevent them from burning.

When you let them cool completely you can store them in an air-tight container (personally I prefer glass jars with wooden lids for this). They will be good for a few weeks. With that in mind you can also double the recipe for a big batch. Just make sure that you spread the granola out well to get the crunch, or bake in multiple batches.

Pumpkin Spice Granola Recipe

Ingredients

  • 200 grams of rolled oats
  • 150 grams of pecans (roughly chopped)
  • 25 grams of popped quinoa
  • 15 grams of chia seeds
  • 4 tablespoons of maple syrup
  • 4 tablespoons of oil of your choice
  • 2 teaspoons of pumpkin spice seasoning
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 180 degrees Celsius and prepare a baking sheet lined with parchment paper. The larger the baking sheet, the easier it is.
  2. In a bowl, combine the rolled oats, popped quinoa, and chia seeds.
  3. In a separate bowl, mix together the oil, maple syrup, vanilla extract, pumpkin spice seasoning, and pinch of salt. Pour this mixture over the oats and stir until everything is well coated.
  4. Spread the granola mixture evenly on the prepared baking sheet. The more evenly spread, the crispier it will bake.
  5. Bake in the oven for 20 minutes. After 10 minutes, give the granola a stir and add the chopped pecans (adding them later prevents them from burning).
  6. Allow the autumn granola to cool completely and store it in a well-sealed container. Enjoy!

My favorite way to eat Pumpkin Spice Granola

I love to eat them for breakfast (or as a snack) sprinkled over my yogurt. I always go for plain low-fat yogurt to which I add some sweetness myself, such as a splash of maple syrup, agave syrup, or honey. Then I add a generous amount of pumpkin spice granola and top it off with some fruit for a fresh touch.
